The overage screen is the same one used to enter an original customer order including the Estimated Delivery Date and Measure Date.
The difference is that most fields can't be changed, as they are attached to the original and therefore will inherit most information.
The fields that can be changed are marked by a red square.

Sold To
Purchase Order Number
Misc. Charges
Sales & Misc. Tax
Lines Button - any lines entered on an overage are also reflected on the original order.
